Stuffed Delicata Squash

 

Ingredients

4 Delicata Squash, cut in half, and seeds removed

1 head of cauliflower, cut into florets

2 Tbsp sodium-free spice blend

2 Tbsp olive oil

1/2 cup shredded (vegan) Gorgozola cheese or any cheese of your choosing

Cauliflower dressing:

2 Tbsp mayonnaise

Juice of 1 lemon or 2 Tbsp apple cider vinegar

2 Tbsp dried oregano

1 Tbsp chili sauce or hot sauce


Directions

  1. Wash all vegetables. Cut Delicata squash in half, remove the seeds, then place on baking sheet and tray. Drizzle with 1 tbsp olive oil. Bake at 200 degrees Celsius for 25 minutes.

  2. Wash cauliflower, and cut into florets. Drizzle with 1 tbsp olive oil and add sodium-free spice blend. Bake at 200 degrees Celsius for 25 minutes (with the squash).

  3. Combine ingredients for dressing in a mason jar and shake to mix well.

  4. Remove squash and cauliflower from the oven.

  5. Using a handheld blender, combine cauliflower and dressing, or use a potato masher to combine. Cauliflower should have consistency of mashed potatoes.

  6. Spoon cauliflower puree into the squash bowls, and top with cheese.

  7. Bake in the oven at 200 degrees Celsius for 15 minutes.

  8. Serve as a side dish or enjoy as an afternoon snack!
