Quinoa Fritters (vegetarian)

 

Quinoa Fritters

 

Ingredients

  • 6 cups quinoa, cooked

  • 3 cups baby spinach, microwaved until softened

  • 1 white onion, finely chopped

  • 3 cloves garlic, finely chopped

  • 3 Tbsp Four Elements Persian Adventurer Spice Blend

  • 2 Tbsp Four Elements Universal Spice Blend

  • 1/2 cup Parmesan cheese, grated

  • 3 cups bread crumbs

  • 4 eggs

  • 2 Tbsp olive oil


Instructions

  1. Preheat oven to 200 degrees Celsius.

  2. Line a baking sheet with reusable parchment paper or non-stick liner.

  3. In a large bowl, combine quinoa, onion, garlic, spices, parmesan, and bread crumbs

  4. Beat eggs and add in olive oil. Add to remaining ingredients.

  5. Drain excess fluid from spinach and chop finely. Add to mixture.

  6. Form patties and place with 2cm-distance on baking sheet.

  7. Bake until golden brown, for about 25 minutes.

  8. Serve with Greek salad, or use as a side dish with your meal.


This recipe makes for a great appetizer with some garlic yogurt mayo or yogurt dip.
