Ingredients

For Tofu Ricotta

1 brick extra firm organic tofu

2 Tbsp lemon juice

3 sprigs of green onion

Using a food processor with a blade insert, puree these three ingredients together. You may freeze this mixture for later use, or use in lasagne, pasta and this Pad Thai recipe.

Additional Ingredients

1 Tbsp vegetable oil

2 Tbsp nut butter

2 Tbsp tamari

2 Tbsp maple syrup

1 Tbsp hot sauce

4 Tbsp lemon juice

3 chili peppers or 1 Tbsp red pepper flakes 

1 Tbsp Dani's Universal Spice Mix

You can use any vegetables you have on hand for the Pad Thai. I like:

  • Shiitake Mushrooms

  • Celery

  • Carrots

  • Onions

  • Ginger

  • Cabbage

  • Homemade sprouts

  • Green beans/broccoli

Instructions

1. In a saucepan, heat 1 Tbsp vegetable oil and sauté the onion. 

2. Add remaining ingredients.

3. Gently sauté, using a spatula until all the vegetables are cooked and the sauce has come to a gentle boil.

4. Serve on a bed of gluten free pasta noodles or with rice.
