Ingredients

1/2 cup vegetable oil

1 cup tahini (or any nut butter)

1/2 cup maple syrup

1 flax egg (1 Tbsp flax + 2 Tbsp water)

1 tsp vanilla extract

1 1/2 cups gluten free flour

1/4 cup flax meal

1 tsp salt

1 tsp baking powder

3 cups frozen blueberries (or any frozen fruit)

Instructions

  1. Preheat the oven to 190 degrees Celsius.

  2. Line a pan with parchment paper (I use a reusable non-stick silicone sheet).

  3. Combine all the wet ingredients in a medium bowl. Make sure that they are well-mixed, using a whisk.

  4. Combine all the dry ingredients in a separate bowl.

  5. Slowly add the dry mixture to the wet mixture, until you form a dough.

  6. Separate the dough into 2/3 and 1/3 amounts. Press the 2/3 portion into the bottom of the pan.

  7. Place blueberries on top of the dough, gently pressing them in to secure them in place.

  8. Roll the 1/3 portion of dough into a long tube, then cut into circles to place on top of the blueberries.

  9. Bake for 30 minutes until the top layer is golden brown.

  10. Serve with plain (vegan) yogurt.
